In a skillet over medium heat, add olive oil and ground beef. Cook until browned, about 5-7 minutes.
Chop the bell pepper and add it to the skillet. Stir in garlic powder, onion powder, salt, and black pepper. Cook for another 3-4 minutes until the pepper is tender.
Reduce the heat to low and sprinkle the cheddar cheese over the beef and pepper mixture. Cover the skillet until the cheese melts, about 2-3 minutes.
Serve hot, garnished with additional bell pepper slices if desired.
