In a skillet, heat olive oil over medium heat and cook the diced chicken breast until golden brown and fully cooked, about 5-7 minutes. Set aside.
In a mixing bowl, whisk together the eggs, heavy cream, salt, black pepper, and garlic powder until well combined.
Add the cooked chicken and half of the shredded cheese into the egg mixture, stirring to combine.
Pour the mixture into a greased baking dish, top with the remaining cheese, and bake for 25-30 minutes, or until the eggs are set and the top is golden.
