In a skillet, melt the butter over medium heat and add the diced chicken. Cook until the chicken is golden brown, about 5-7 minutes.
Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
Stir in the diced tomato, salt, chopped chili pepper, and mixed herbs, cooking for an additional 2 minutes.
Remove from heat and stir in half the shredded cheese until melted and combined.
Spoon the mixture into the lettuce leaves and top with the remaining cheese. Serve immediately.
