In a mixing bowl, combine coconut flour, oat fiber, and beef gelatin. Mix well until all dry ingredients are combined.
In a separate bowl, whisk together the eggs and olive oil until smooth.
Gradually add the egg mixture to the dry ingredients, stirring until a dough forms. If the dough is too dry, add a little water, one teaspoon at a time.
Knead the dough for 2-3 minutes until it is smooth and elastic. Let it rest for 15 minutes.
On a well-floured surface (using extra coconut flour), roll out the dough to 1/8 inch thickness. Cut into your desired pasta shape.
Bring a pot of salted water to a boil (use low-sodium salt if necessary). Gently drop the pasta into the boiling water and cook for 3-5 minutes until they float to the surface and are tender.
Drain the pasta and rinse with cold water to stop the cooking process. Toss with fresh herbs before serving.
